What size motor cog do you think I get away with?, big as possible without causing myself problems

depends upon the wind of the motor - and in some instances the layout of the track, but mostly the wind of the motor.
what motor do you have installed?

a 12 double but thinking about gettineg something like a 6 or 7 eventually when i get used to the cars performance

6 0r 7 turn Bloody Hell - you'll be going plenty fast enough with a 12. I would not recommend going below a 9. There comes a point when you can have too much power, and I cannot think of single reason why you would ever need a 6 or 7 turn. As for your 12, think mabe a 21 tooth pinion to begin with, and then go from there.
